I was vegan for three years,
which is why most of these recipes are.

This page hasn't really been maintained since the late 90's; most of my recipes are over on FCG.

Before you try any of these recipes, I should warn you:
I'm not a very good cook.


Chai
Bean salad

Chai


Chai is a hot tea blend that originated in India.
I like it because it wakes me up without being caffeinated.
Everyone's tastebuds are different, so my version of chai is suited to how I like it (sweet and somewhat spicy);
change amounts of ingredients to suit yourself.
This recipe makes about a gallon, which can be refrigerated and reheated.
Bring 6-8 quarts of water to boil.


Add:

* a handful of cinnamon
* half a handful of cardimum pods
* handful of allspice
* half a handful of star anise
* one whole nutmeg, slightly crushed
* some black peppercorns (to taste)
* some fresh ginger root (to taste)
* 3 cloves
* some orange peel

optional:

* half a handful of cinnamon-orange spice tea (decaf)
* vanilla bean

Let simmer, covered, for 8-10 hours.
By then, about 1/3 of the water will have boiled off.
Strain the tea out, it should be about a gallon.
I serve my chai with soy milk and honey, but it's just as good with real milk, too.





Protein bean salad



* 3 cans black beans
* 2 cans of corn
* 1 can garbonzo beans
* cherry tomatoes, halved or quartered
* red and green onion, chopped
* fresh cilantro to taste
* sliced mushrooms
* 1/2 tsp. cumin
* pinch of cinnamon
* pepper to season
* juice from a lemon
* 1/2 to 1 cup balsamic vinegar
* 1/4 to 1/2 cup olive oil


Mix the above ingredients, and let chill in the fridge.
This salad makes a good dip for tortilla chips.
It marinates itself, getting better the day after you make it.





Faerie bread


When I first heard about this in Sydney, it sounded really weird
(I'm told it was served with cookies at birthday parties).
But I tried it with an open mind and it turned out to be pretty good.
It's nice when i'm craving something sweet but don't have much in the house.

To make faerie bread, butter up a piece of soft white bread.
Sprinkle it with little colored balls (cake decorations) on it, and eat.





Chocolate chip cookies!

A while back, my mom went on a five-year quest to find the perfect chocolate chip recipe.
Here's what she found.


* 2 1/4 cup all-purpose flour
* 1 tsp. baking soda
* 1 tsp. salt
* 1/2 cup sugar
* 1/2 cup firmly packed light brown sugar
* 1/2 cup butter or margarine
* 1/2 cup shortening
* 1 tsp. vanilla extract
* 3 tblsp. water
* 2 eggs
* 1 cup chopped nuts
* 1 pkg. (12 oz.) semisweet chocolate chips (2 cups)


Same directions as shown after vegan ingredients.


Vegan adaption

* 2 1/4 cup all-purpose flour
* 1 tsp. baking soda
* 1/2 tsp. baking powder
* 1 tsp. salt
* 1/2 cup sugar
* 1 tsp. cinnamon
* 1/2 cup firmly packed light brown sugar
* 3/4 cup margarine
* 1/4 cup vegetable shortening (crisco)
* 2 tsp. vanilla extract
* 2 tblsp. water or soy milk
* 1 small banana, mushed
* 1 pkg. (12 oz.) semisweet chocolate chips (2 cups)
(I recommend Ghiradelli semi-sweet)

Preheat the oven to 375. Grease two large cookie sheets; set aside.
In a small bowl, combine the flour, baking soda, powder, cinnamon and salt.
In another bowl, cream the softened margarine, banana, sugars, shortening, vanilla, and water until fluffy.
Add the flour mixture, and then stir in the chocolate chips.
Drop by teaspoonfuls onto cookie sheets
and bake 10 to 12 minutes, being careful not to overcook them.





Vegan pancakes


from the New Farm vegan cookbook:

* 1 1/4 cup flour
* 2 tbsp sugar
* 2 tsp powder
* 1/2 tsp salt
* 2tbsp oil
* 1/2 cup water
* 3/4 cup soy milk
* vanilla
* cinnamon

Combine the dry stuff in one bowl, and the wet stuff in another.
Mix them together, and then pour in a hot pan to make pancakes.
Flip the pancakes when air bubbles form on the top.





Cinnamon spread


The only good thing to ever come from a dorm cafeteria.
I used to love this stuff; now I think it's too sweet.

* 2.5 oz. margarine
* 1/2 cup brown sugar, unpacked
* 2 tablespoons ground cinnamon
* 1/8 cup non-dairy creamer
* 2 tablespoons water
* 1 1/3 cups powdered sugar
* 1/2 tsp. vanilla


Cream the brown sugar and margarine until fluffy. Add cinnamon and non-dairy creamer.
Add half the water and half the powdered sugar and beat until smooth.
Add vanilla and the rest of the water and powdered sugar, stir until smooth.
Spread on toast, fruit, cake, bread, anything...
